Ingredients
  

  • Cake:
  • 1 cup cake flour
  • cups granulated sugar divided
  • 12 large egg whites room temperature
  • tsp cream of tartar
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • ½ tsp almond extract optional

Instructions
 

  • Sift dry ingredients and whip egg whites.
  • Add sugar and beat until stiff peaks form.
  • Fold in flour mixture gently.
  • Transfer to pan and bake.
  • Cool upside down, then slice and serve.

Notes

Do not grease the pan
Fold gently to keep air in the batter
Cool upside down to prevent collapse
Use room-temperature egg whites
