Sweet and savory bacon jam made with bacon, onions, brown sugar, and maple syrup.

- 1 lb bacon chopped
- 1 medium onion finely diced
- 3 cloves garlic minced
- ½ cup brown sugar
- ¼ cup maple syrup
- ⅓ cup apple cider vinegar
- ¼ cup brewed coffee
- ½ tsp black pepper
- Optional: pinch of cayenne or chili flakes
Cook bacon until crisp; reserve fat.
Sauté onion and garlic.
Add remaining ingredients and bacon.
Simmer until thick and jammy.
Cool and store.
