Ingredients
  

  • 4 whole rainbow trout ¾–1 lb each, cleaned
  • Olive oil · salt · pepper
  • Lemon slices · fresh dill · garlic · shallot

Instructions
 

  • 450 °F oven → pat trout dry → score skin.
  • Stuff cavities with lemon, herbs, garlic.
  • Oil + season → bake upper third 12–18 min.
  • Optional butter baste last 2 min.
  • Rest 3 min → serve with lemon wedges.

Notes

  • Dry fish + hot oven = crispy skin
  • Pull at 135–140 °F → perfect flaky
  • Leftovers = elite taco filling
  • The grill version is just as good
  • Kids love it when heads are off
