- 4 whole rainbow trout ¾–1 lb each, cleaned
- Olive oil · salt · pepper
- Lemon slices · fresh dill · garlic · shallot
450 °F oven → pat trout dry → score skin.
Stuff cavities with lemon, herbs, garlic.
Oil + season → bake upper third 12–18 min.
Optional butter baste last 2 min.
Rest 3 min → serve with lemon wedges.
