Ingredients
  

  • Beef:
  • –3 pounds beef chuck roast
  • tsp salt
  • 1 tsp black pepper
  • Sauce:
  • 3 –4 chipotle peppers in adobo sauce
  • 3 cloves garlic minced
  • 1 tbsp cumin
  • 1 tsp oregano
  • ½ tsp paprika
  • ¼ cup lime juice
  • 2 tbsp apple cider vinegar
  • ½ cup beef broth
  • Garnish:
  • Chopped cilantro
  • Diced onions
  • Lime wedges

Instructions
 

  • Season and optionally sear beef.
  • Prepare sauce and pour over beef in crock pot.
  • Cook until tender and shred.
  • Return to sauce and rest briefly.
  • Serve with desired toppings.

Notes

Cook low and slow for the best texture
Adjust spice level to taste
Store with sauce for moisture
