Ingredients
  

  • Roast:
  • 3 –4 lb chuck roast
  • Onion · carrots · celery · garlic
  • Braise:
  • Red wine · beef broth · tomato paste
  • Rosemary · thyme · bay leaves

Instructions
 

  • Sear roast → remove.
  • Sauté veggies + paste.
  • Deglaze with wine → add broth + herbs.
  • Return roast → 325 °F covered 3 hrs.
  • Add potatoes last 45 min.
  • Rest → thicken gravy → serve.

  • Bone-in = richer gravy
