Ingredients
  

  • Beef:
  • pounds flank steak or skirt steak sliced thin
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetables:
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 large onion sliced
  • Seasoning:
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Tortillas:
  • 8 small tortillas
  • Topping:
  • Sour cream
  • Shredded cheese
  • Salsa
  • Guacamole
  • Fresh cilantro
  • Lime wedges

Instructions
 

  • Slice beef thinly against the grain.
  • Season beef with oil and spices.
  • Heat pan until very hot.
  • Cook beef until browned and remove.
  • Cook peppers and onions until tender-crisp.
  • Return beef to pan and combine.
  • Cook briefly to heat through.
  • Warm tortillas until soft.
  • Let mixture rest briefly.
  • Serve with tortillas and toppings.

Notes

Slice against the grain
Use high heat for searing
Do not overcook beef
Serve immediately
