Best Black Bean Soup

Hearty black bean soup with warm spices and optional creamy texture.

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion diced
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ¼ tsp cayenne optional
  • 3 15 oz cans black beans, drained and rinsed
  • 4 cups vegetable or chicken broth
  • 1 14.5 oz can diced tomatoes
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 tbsp lime juice or apple cider vinegar
  • Optional Garnishes:
  • Sour cream or Greek yogurt
  • Chopped cilantro
  • Avocado slices
  • Tortilla strips or chips

Instructions
 

  • Sauté onion and pepper.
  • Bloom spices with garlic.
  • Add beans, broth, and tomatoes; simmer.
  • Blend partially if desired.
  • Season, finish with lime, and serve.

Notes

  • Rinse beans well
  • Blend to your preferred texture
  • Add acid at the end
