Best Black Beans and Rice

Classic black beans simmered with aromatics and spices, served over fluffy rice.

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion finely diced
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 2 15 oz cans black beans, rinsed and drained
  • 1 cup vegetable or chicken broth
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ¼ tsp oregano
  • Salt and black pepper to taste
  • 2 cups cooked white or brown rice
  • Optional garnish: cilantro lime wedges, avocado

Instructions
 

  • Sauté onion and bell pepper.
  • Add garlic and spices.
  • Simmer beans with broth.
  • Mash slightly, season, and serve over rice.

Notes

  • Mash some beans for thickness
  • Adjust seasoning to taste
  • Finish with lime for brightness
  • Great for meal prep
