- 2 tbsp olive oil
- 1 large onion diced
- 3 cloves garlic minced
- 2 cups cooked shredded chicken rotisserie works great
- 2 cups cooked shredded pork pulled pork or leftover pork roast
- 3 cups chicken broth
- 1 14.5 oz can crushed tomatoes
- 1 15 oz can corn, drained
- 1 15 oz can lima beans or butter beans, drained
- 1 cup diced potatoes optional, traditional in some regions
- ¼ cup barbecue sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt adjust to taste
- ¼ tsp cayenne or red pepper flakes optional
Sauté onion and garlic.
Add broth, tomatoes, and vegetables.
Stir in seasonings and meats.
Simmer until thick and flavorful.
Adjust seasoning and serve.
