Best Butter Chicken Sauce

Creamy tomato-based Indian butter chicken sauce with warm spices.

Ingredients
  

  • 2 tbsp butter
  • 1 tbsp neutral oil
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp garam masala
  • tsp ground cumin
  • tsp ground coriander
  • 1 tsp paprika or Kashmiri chili powder
  • ½ tsp turmeric
  • ½ –1 tsp chili powder adjust to taste
  • 1 14.5 oz can crushed tomatoes or tomato purée
  • ½ cup heavy cream
  • 1 tbsp sugar or honey optional, to balance acidity
  • 1 tsp salt adjust to taste
  • Optional finishing butter: 1–2 tbsp
  • Optional garnish: dried fenugreek leaves kasuri methi, cilantro

Instructions
 

  • Sauté onion in butter and oil.
  • Add garlic, ginger, and spices.
  • Simmer tomatoes until thick.
  • Blend smooth if desired.
  • Stir in cream, season, and serve.

Notes

  • Blend for silky texture
  • Keep the heat low after adding cream
  • Adjust the spice to taste
  • Freezes very well
