neutral oil

medium onion
finely chopped

garlic

paprika or Kashmiri chili powder

turmeric

adjust to taste

14.5 oz can crushed tomatoes or tomato purée

heavy cream

sugar or honey
optional, to balance acidity

salt
adjust to taste
Optional finishing butter: 1–2 tbsp
Optional garnish: dried fenugreek leaves
kasuri methi, cilantro
Instructions
Sauté onion in butter and oil.
Add garlic, ginger, and spices.
Simmer tomatoes until thick.
Blend smooth if desired.
Stir in cream, season, and serve.
Notes
Blend for silky texture
Keep the heat low after adding cream
Adjust the spice to taste
Freezes very well
