- Pie Filling:
- ½ cup unsalted butter melted and slightly cooled
- 1½ cups granulated sugar
- 3 large eggs
- 1 cup buttermilk
- 2 tbsp all-purpose flour
- 1 tbsp cornmeal
- 1 tbsp lemon juice
- 2 tsp vanilla extract
- ¼ tsp salt
- Crust:
- 1 unbaked 9-inch pie crust store-bought or homemade
- Optional garnish:
- Powdered sugar
- Whipped cream
Preheat oven to 350°F.
Whisk butter, sugar, and eggs.
Mix in remaining ingredients.
Pour into pie crust.
Bake until edges set and center slightly jiggles.
Cool completely before slicing.
