oil
vegetable or coconut oil

medium onion
finely diced

cloves
garlic
minced

tbsp
fresh ginger
grated

tsp
garam masala

tsp
ground cumin
1
tsp
ground coriander

tsp
turmeric

tsp
chili powder or Kashmiri chili powder

14.5 oz can diced tomatoes

15 oz cans chickpeas, drained and rinsed
½
cup
water or vegetable broth

tsp
salt
adjust to taste
1
tsp
amchur
dry mango powder or 1 tbsp lemon juice
Optional garnish: chopped cilantro
Instructions
Sauté onion until golden.
Add garlic, ginger, and spices.
Stir in tomatoes and cook until thick.
Add chickpeas and simmer.
Finish with lemon juice and serve.
Notes
Bloom spices for best flavor
Add tang at the end
Tastes even better the next day
Great with rice or naan
