Best Chana Masala

Classic Indian chickpea curry simmered with spices and tomatoes.

Ingredients
  

  • 2 tbsp oil vegetable or coconut oil
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • 1 tsp chili powder or Kashmiri chili powder
  • 1 14.5 oz can diced tomatoes
  • 2 15 oz cans chickpeas, drained and rinsed
  • ½ cup water or vegetable broth
  • 1 tsp salt adjust to taste
  • 1 tsp amchur dry mango powder or 1 tbsp lemon juice
  • Optional garnish: chopped cilantro

Instructions
 

  • Sauté onion until golden.
  • Add garlic, ginger, and spices.
  • Stir in tomatoes and cook until thick.
  • Add chickpeas and simmer.
  • Finish with lemon juice and serve.

Notes

  • Bloom spices for best flavor
  • Add tang at the end
  • Tastes even better the next day
  • Great with rice or naan
