Best Cherry Pie Recipe

A classic pie with a flaky crust and a sweet-tart cherry filling.

Ingredients
  

  • Pie Crust:
  • cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • 1 tsp salt
  • 1 tbsp sugar
  • 6 –8 tbsp ice water
  • Filling:
  • 4 cups fresh or frozen cherries pitted
  • ¾ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Topping:
  • 1 egg
  • 1 tbsp milk
  • 1 tbsp coarse sugar

Instructions
 

  • Prepare and chill pie dough.
  • Make cherry filling and add to crust.
  • Top with second crust and brush with egg wash.
  • Bake until golden and bubbling.
  • Cool completely before slicing.

Chill the dough for flakiness
Vent top crust
Cool before slicing
Use fresh or frozen cherries
