Ingredients
Chicken:

cooked chicken
shredded
Soup Base:

butter

olive oil

small onion
diced

cloves
garlic
minced

carrots
diced

cup
celery
diced
Broth:
4
cups
chicken broth
1
cup
heavy cream
Add-ins:
1
pound
potato gnocchi
1
cup
fresh spinach
chopped
½
tsp
salt
½
tsp
black pepper
½
tsp
dried thyme
Instructions
Sauté onion, carrots, celery, and garlic in butter and oil.
Add chicken broth and bring to a simmer.
Stir in gnocchi and cook until tender.
Add shredded chicken and heavy cream.
Stir in spinach and seasonings before serving.
Notes
Use rotisserie chicken for convenience
Do not overcook gnocchi
Add extra broth if the soup becomes too thick
Serve warm for the best flavor
