Best Chickpea Salad
Fresh chickpea salad with crisp vegetables and a bright lemon-olive oil dressing.

- 2 15 oz cans chickpeas, rinsed and drained
- 1 cup cucumber diced
- 1 cup cherry tomatoes halved
- ¼ cup red onion finely diced
- ¼ cup fresh parsley chopped
- Optional add-ins: feta cheese olives, bell pepper, avocado
- Dressing:
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- ½ tsp dried oregano
- Salt and black pepper to taste
Rinse and drain chickpeas well.
Chop vegetables and herbs.
Whisk dressing ingredients.
Toss everything together and rest briefly.
Serve chilled or at room temperature.
