Best Chickpea Salad

Fresh chickpea salad with crisp vegetables and a bright lemon-olive oil dressing.

Ingredients
  

  • 2 15 oz cans chickpeas, rinsed and drained
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely diced
  • ¼ cup fresh parsley chopped
  • Optional add-ins: feta cheese olives, bell pepper, avocado
  • Dressing:
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp dried oregano
  • Salt and black pepper to taste

Instructions
 

  • Rinse and drain chickpeas well.
  • Chop vegetables and herbs.
  • Whisk dressing ingredients.
  • Toss everything together and rest briefly.
  • Serve chilled or at room temperature.
