Best Coq au Vin Recipe
Classic French chicken braised in red wine with bacon, mushrooms, and herbs.

- 4 lb bone-in skin-on chicken pieces
- Salt and black pepper to taste
- 4 slices bacon chopped
- 1 tbsp olive oil if needed
- 1 large onion chopped
- 3 cloves garlic minced
- 2 tbsp all-purpose flour
- 2 cups dry red wine Burgundy, Pinot Noir, or similar
- 1 cup chicken stock
- 2 tbsp tomato paste
- 1 bay leaf
- 2 –3 sprigs fresh thyme
- 8 oz mushrooms halved
- 1 cup pearl onions fresh or frozen
- Optional garnish: fresh parsley
Brown bacon and chicken.
Sauté aromatics and build sauce.
Deglaze with wine and add stock.
Braise until tender, then finish with mushrooms.
Rest briefly and serve.
- Use dry red wine
- Brown the chicken deeply
- Simmer gently
