Best Cottage Pie

Classic cottage pie with seasoned beef and creamy mashed potatoes.

Ingredients
  

  • Meat Filling:
  • 1 tbsp olive oil
  • lb ground beef
  • 1 medium onion finely diced
  • 2 carrots finely diced
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme or ½ tsp dried
  • Salt and black pepper to taste
  • Mashed Potato Topping:
  • 2 lb potatoes peeled and cubed
  • 4 tbsp unsalted butter
  • ½ cup milk or cream
  • Salt to taste
  • Optional: grated cheddar cheese for topping

Instructions
 

  • Cook and mash potatoes.
  • Brown beef and build gravy.
  • Assemble meat and potato layers.
  • Bake until bubbling and golden.
  • Rest briefly and serve.

Notes

  • Simmer filling until thick
  • Season generously
  • Rest before slicing
  • Freezes very well
