Best Cottage Pie
Classic cottage pie with seasoned beef and creamy mashed potatoes.

- Meat Filling:
- 1 tbsp olive oil
- 1½ lb ground beef
- 1 medium onion finely diced
- 2 carrots finely diced
- 2 cloves garlic minced
- 2 tbsp tomato paste
- 2 tbsp all-purpose flour
- 1½ cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme or ½ tsp dried
- Salt and black pepper to taste
- Mashed Potato Topping:
- 2 lb potatoes peeled and cubed
- 4 tbsp unsalted butter
- ½ cup milk or cream
- Salt to taste
- Optional: grated cheddar cheese for topping
Cook and mash potatoes.
Brown beef and build gravy.
Assemble meat and potato layers.
Bake until bubbling and golden.
Rest briefly and serve.
- Simmer filling until thick
- Season generously
- Rest before slicing
- Freezes very well
