Classic Southern white country gravy made with a simple roux and milk.

Ingredients
  

  • 3 tbsp butter bacon drippings, or sausage fat
  • 3 tbsp all-purpose flour
  • 2 cups whole milk warm
  • ½ –1 tsp freshly ground black pepper
  • ½ tsp salt adjust to taste
  • Optional: pinch of cayenne or garlic powder

Instructions
 

  • Melt fat and whisk in flour.
  • Cook roux briefly until smooth.
  • Slowly whisk in milk.
  • Simmer until thickened.
  • Season and serve hot.

Notes

  • Warm milk prevents lumps
  • Whisk constantly
  • Adjust the thickness with milk
  • Best served immediately
