Classic slow cooker beef stew with tender beef, vegetables, and rich broth.

- 2½ lb beef chuck cut into 1½-inch cubes
- 3 tbsp olive oil
- ¼ cup all-purpose flour
- 1½ tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 large onion chopped
- 3 cloves garlic minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 4 carrots sliced
- 3 –4 potatoes diced
- 2 celery stalks sliced
- 1 bay leaf
- Optional: fresh parsley for garnish
Season and sear beef.
Sauté aromatics and build broth.
Add everything to slow cooker.
Cook low and slow until tender.
Adjust seasoning and serve.
