Best Crock Pot Vegetable Beef Soup

Hearty slow cooker vegetable beef soup with tender beef and classic vegetables.

Ingredients
  

  • 2 lb beef chuck cut into 1–1½-inch cubes
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 14.5 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 3 carrots sliced
  • 2 cups green beans cut
  • 2 potatoes diced
  • 2 celery stalks sliced
  • 1 cup corn fresh or frozen
  • 1 bay leaf
  • Optional garnish: fresh parsley

Instructions
 

  • Season and sear beef.
  • Sauté aromatics and build broth.
  • Add everything to slow cooker.
  • Cook low and slow until tender.
  • Adjust seasoning and serve.

Notes

  • Chuck roast gives the best texture
  • Searing adds flavor
  • Great for freezing
  • Tastes better the next day
