- 1½ lb boneless skinless chicken breasts or thighs
- 1 medium onion diced
- 3 cloves garlic minced
- 2 15 oz cans white beans (cannellini or great northern), drained and rinsed
- 1 4 oz can diced green chilies
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp salt adjust to taste
- ¼ tsp black pepper
- 3 cups chicken broth
- 4 oz cream cheese cubed
- ½ cup sour cream
- 1 cup shredded Monterey Jack or Pepper Jack cheese
Add chicken, beans, aromatics, and spices to slow cooker.
Pour in broth and cook until chicken is tender.
Shred chicken and return to pot.
Stir in cream cheese, sour cream, and cheese.
Rest briefly and serve.
