Ingredients
Eggs & Filling:

large eggs

cup
120 g mayonnaise

tbsp
yellow mustard or Dijon

tbsp
apple cider vinegar or pickle juice

tsp
hot sauce
Frank’s or Tabasco

tsp
kosher salt

tsp
black pepper
½
tsp
smoked paprika
Optional: 2 tbsp finely chopped chives or dill
Coating:
¾
cup
90 g all-purpose flour

large eggs + 1 tbsp water

150 g panko breadcrumbs

tsp
smoked paprika

tsp
garlic powder
Salt & pepper
Oil for frying
peanut, canola, or vegetable
Garnish:
Smoked paprika sprinkle
Chopped chives or parsley
Extra hot sauce
Instructions
Hard-boil + halve eggs → make filling.
Bread whites → chill.
Fry 350 °F 1–2 min until golden.
Pipe chilled filling → garnish → serve.
Notes
Chill breaded whites = coating sticks
Fry in batches = perfect crisp
Make filling ahead
Bacon or buffalo versions = elite
Day 2 cold = still incredible
