Ingredients
  

  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar plus extra for rolling
  • ¼ cup molasses
  • 1 large egg
  • cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • 2 tsp baking soda
  • ¼ tsp salt

Instructions
 

  • Cream butter and sugar.
  • Mix in molasses and egg.
  • Add dry ingredients to form dough.
  • Roll in sugar and bake.
  • Cool and enjoy.

Notes

  • Do not overbake
  • Use mild molasses
  • Cool the pan briefly
  • Bake longer for crisp cookies
