- 1 lb ground beef
- 1 medium onion diced
- 2 cloves garlic minced
- 3 carrots sliced
- 2 celery stalks sliced
- 2 cups potatoes diced
- 1 14.5 oz can diced tomatoes
- 6 cups beef broth
- 1 cup frozen corn or green beans
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper to taste
- 1 tbsp olive oil
- Optional: bay leaf fresh parsley
Brown ground beef and drain fat.
Add onion, garlic, and vegetables.
Pour in broth and tomatoes.
Simmer until vegetables are tender.
Adjust seasoning and serve.
