Best Healthy Almond Flour Cookies
Soft, chewy, gluten-free almond flour cookies — naturally sweetened, packed with chocolate, healthy never tasted this good.

- 2 cups blanched almond flour
- ½ tsp baking soda · ¼ tsp salt
- ¼ cup melted butter or coconut oil
- ⅓ cup coconut sugar or monk fruit
- 1 egg · 2 tsp vanilla
- ½ –¾ cup dark chocolate chips
- Flaky salt for tops
350 °F oven.
Whisk dry → add wet → fold in chips.
Scoop 2-tbsp balls → flatten slightly → top with chips + salt.
Bake 9–12 min — edges golden, centers soft.
Cool on tray 10 min → devour.

- Underbake slightly = chewy centers
- Freeze dough balls → bake anytime
- Vegan: flax egg + coconut oil
- Day 3 = still ridiculously soft
