Ingredients
  

  • Dry:
  • 1 cup oat flour
  • ¾ cup whole-wheat flour
  • 1 tsp baking powder
  • Cinnamon ginger, nutmeg
  • Wet:
  • 1 cup grated carrots
  • 1 mashed banana
  • ¼ cup maple syrup
  • ¼ cup coconut oil
  • 1 egg
  • Raisins + walnuts

Instructions
 

  • Preheat 350 °F; line sheet.
  • Whisk dry ingredients.
  • Stir in wet + add-ins.
  • Rest 5 min.
  • Scoop; flatten slightly.
  • Bake 12–14 min.
  • Cool; optional glaze.

Notes

  • Pat carrots dry.
  • Freeze up to 3 months.
  • Vegan: Flax egg.
  • 1½-tbsp scoop = uniform.
  • Store with parchment layers.
