Ingredients
  

  • 2 cups 250 g all-purpose flour (or 00 flour)
  • 3 large eggs room temperature
  • Optional: ½ tsp salt
  • Optional: 1 tsp olive oil extra silkiness

Instructions
 

  • Mound flour and create a well.
  • Add eggs and incorporate gradually.
  • Knead until smooth and elastic.
  • Rest dough 30–45 minutes.
  • Roll, cut, and cook fresh.
