Best Homemade Waffle Mix
Make-ahead dry mix for ultra-crisp, fluffy buttermilk waffles — just add wet ingredients.

- Dry Mix:
- 8 cups 1040 g all-purpose flour
- 1 cup 120 g cornstarch (the crisp secret)
- ¾ cup 150 g granulated sugar
- ½ cup 60 g buttermilk powder (found in baking aisle)
- ¼ cup 30 g baking powder
- 2 tbsp baking soda
- 1 tbsp fine sea salt
- 2 tsp ground cinnamon optional but elite
- To Make One Batch: 8–10 waffles
- 2 cups 260 g waffle mix
- 2 large eggs
- 1¾ cups 420 ml water or milk
- ½ cup 120 ml neutral oil or melted butter
- 2 tsp vanilla extract
Whisk all dry → store in airtight jar.
To use: 2 cups mix + wet ingredients → rest 5 min.
Cook in hot iron until golden.
