Best Hoppin’ John Recipe

Classic Southern black-eyed peas simmered with bacon and served over rice.

Ingredients
  

  • 1 lb dried black-eyed peas
  • 6 cups chicken broth or water
  • 6 oz bacon diced (or smoked ham hock)
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 bay leaf
  • ½ tsp dried thyme
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • Salt to taste
  • 2 cups cooked white rice
  • Optional garnish: chopped green onions or hot sauce

Instructions
 

  • Soak and rinse peas.
  • Cook bacon and sauté vegetables.
  • Add peas, broth, and seasonings.
  • Simmer until tender.
  • Serve over rice.

  • Salt at the end
  • Simmer gently
