  • ½ cup unsalted butter cubed

  • Whisk lemon juice, zest, sugar, and eggs in a saucepan.
  • Cook over low heat while stirring until thickened.
  • Remove from heat and stir in butter.
  • Strain for smooth texture and cool.
  • Chill before using.
