Bright, zesty lemon vinaigrette made with fresh lemon juice and olive oil.

- ¼ cup fresh lemon juice about 1–2 lemons
- ½ cup extra-virgin olive oil
- 1 tsp Dijon mustard
- 1 –2 tsp honey or maple syrup to taste
- 1 small clove garlic finely minced (optional)
- ½ tsp salt
- ¼ tsp black pepper
Combine lemon juice, mustard, sweetener, and seasonings.
Whisk in olive oil until emulsified.
Taste and adjust.
Rest briefly and serve.
