Ingredients
  

  • Veal shanks
  • Flour
  • Olive oil and butter
  • Onion carrot, celery
  • Garlic
  • White wine
  • Tomatoes
  • Stock
  • Bay leaves and thyme
  • Lemon zest parsley, garlic (gremolata)

Instructions
 

  • Season and dredge veal shanks; brown well.
  • Sauté vegetables and deglaze with wine.
  • Add liquids and aromatics; return shanks.
  • Braise at 325°F until fork-tender.
  • Finish with gremolata and serve.
