Ingredients
Veal shanks
Flour
Olive oil and butter
Onion
carrot, celery
Garlic
White wine
Tomatoes
Stock
Bay leaves and thyme
Lemon zest
parsley, garlic (gremolata)
Instructions
Season and dredge veal shanks; brown well.
Sauté vegetables and deglaze with wine.
Add liquids and aromatics; return shanks.
Braise at 325°F until fork-tender.
Finish with gremolata and serve.
