Ingredients
Fresh oysters with liquor
Butter
Onion or shallot
Milk
Heavy cream
Salt and pepper
Instructions
Drain oysters and reserve liquor.
Sweat onions gently in butter.
Warm milk, cream, and liquor without boiling.
Add oysters and cook briefly until just done.
Season and serve immediately.
Notes
Gentle heat is critical
Fresh oysters give the best flavor
Do not boil
Serve hot, not reheated aggressively
