- 3 ripe peaches diced small (about 3 cups)
- ¼ cup red onion finely diced
- 1 jalapeño finely minced (seeds removed for mild)
- ¼ cup fresh cilantro finely chopped
- Zest of 1 lime
- 2 tbsp fresh lime juice
- ½ tsp salt adjust to taste
- Optional: 1 tbsp honey or agave if peaches aren’t very sweet
Dice peaches and aromatics finely.
Combine with cilantro, lime zest, and juice.
Season, rest briefly, and serve fresh.
