Best Pickled Red Onions
Quick refrigerator pickled red onions with balanced tang and crunch.

- 1 large red onion thinly sliced
- 1 cup white vinegar or apple cider vinegar
- 1 cup water
- 1½ tbsp sugar adjust to taste
- 1½ tsp kosher salt
- Optional aromatics: peppercorns bay leaf, garlic clove
Thinly slice red onion.
Boil vinegar, water, sugar, and salt.
Add onions and rest briefly.
Transfer to jar and chill before using.
