Quick refrigerator pickled red onions with balanced tang and crunch.

Ingredients
  

  • 1 large red onion thinly sliced
  • 1 cup white vinegar or apple cider vinegar
  • 1 cup water
  • tbsp sugar adjust to taste
  • tsp kosher salt
  • Optional aromatics: peppercorns bay leaf, garlic clove

Instructions
 

  • Thinly slice red onion.
  • Boil vinegar, water, sugar, and salt.
  • Add onions and rest briefly.
  • Transfer to jar and chill before using.
