Best Potato Latkes
Classic crispy potato pancakes — grated potatoes, onion, fried golden with applesauce & sour cream.

- 2½ lbs russet potatoes
- 1 large onion
- 2 eggs · matzo meal or potato starch
- Salt · pepper · baking powder
- Oil for frying
Grate potatoes + onion → squeeze dry.
Mix with eggs + binder + seasonings.
Heat ½ inch oil → fry ¼-cup patties 3–4 min/side.
Drain → salt → serve hot.
- Squeeze dry = max crisp
- Hot oil = no grease
- Freezes raw or cooked beautifully
- Reheats crispier in the oven
