Best Potato Latkes

Classic crispy potato pancakes — grated potatoes, onion, fried golden with applesauce & sour cream.

Ingredients
  

  • lbs russet potatoes
  • 1 large onion
  • 2 eggs · matzo meal or potato starch
  • Salt · pepper · baking powder
  • Oil for frying

Instructions
 

  • Grate potatoes + onion → squeeze dry.
  • Mix with eggs + binder + seasonings.
  • Heat ½ inch oil → fry ¼-cup patties 3–4 min/side.
  • Drain → salt → serve hot.

Notes

  • Squeeze dry = max crisp
  • Hot oil = no grease
  • Freezes raw or cooked beautifully
  • Reheats crispier in the oven
  • Applesauce + sour cream = non-negotiable
