- Pumpkin Cake:
- 1 cup pumpkin purée 100% pumpkin, not pie filling
- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1½ tsp baking powder
- 1½ tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp cloves optional
- ½ tsp salt
- Cream Cheese Frosting: optional
- 8 oz cream cheese softened
- ¼ cup unsalted butter softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Mix wet ingredients until smooth.
Fold in dry ingredients gently.
Bake until set and cool completely.
Frost if desired and serve.
