- 1 cup milk dairy or plant-based
- ½ cup pumpkin purée 100% pumpkin, not pie filling
- ¼ cup chia seeds
- 1 –2 tbsp maple syrup or honey adjust to taste
- ½ tsp pumpkin pie spice
- ½ tsp vanilla extract
- Pinch of salt
- Optional Toppings:
- Greek yogurt or coconut yogurt
- Granola
- Chopped nuts or pecans
- Extra pumpkin spice
Whisk milk, pumpkin, sweetener, spices, and vanilla.
Stir in chia seeds and rest briefly.
Chill until thickened, then stir and serve.
- Stir twice to prevent clumps
- Chill overnight for the best texture
- Adjust the thickness with milk
- Add toppings just before serving
