Ingredients
  

  • 1 cup milk dairy or plant-based
  • ½ cup pumpkin purée 100% pumpkin, not pie filling
  • ¼ cup chia seeds
  • 1 –2 tbsp maple syrup or honey adjust to taste
  • ½ tsp pumpkin pie spice
  • ½ tsp vanilla extract
  • Pinch of salt
  • Optional Toppings:
  • Greek yogurt or coconut yogurt
  • Granola
  • Chopped nuts or pecans
  • Extra pumpkin spice

Instructions
 

  • Whisk milk, pumpkin, sweetener, spices, and vanilla.
  • Stir in chia seeds and rest briefly.
  • Chill until thickened, then stir and serve.

Notes

  • Stir twice to prevent clumps
  • Chill overnight for the best texture
  • Adjust the thickness with milk
  • Add toppings just before serving
