Ingredients
  

  • Slaw:
  • 4 cups red cabbage shredded
  • 1 cup carrots shredded
  • ½ cup green cabbage
  • ¼ cup red onion sliced
  • Dressing:
  • ½ cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp sugar
  • ½ tsp salt
  • ¼ tsp black pepper
  • Topping:
  • Fresh parsley
  • Extra black pepper

Instructions
 

  • Shred cabbage and prepare vegetables.
  • Combine vegetables in a large bowl.
  • Whisk dressing ingredients until smooth.
  • Taste and adjust dressing.
  • Pour dressing over vegetables.
  • Toss until evenly coated.
  • Let slaw rest to absorb flavor.
  • Add parsley and pepper on top.
  • Toss gently again.
  • Serve chilled.
