red potatoes
scrubbed and cut into 1-inch pieces

tbsp
olive oil

tsp
salt

tsp
black pepper

tsp
garlic powder
1
tsp
dried rosemary or thyme
Optional garnish: fresh parsley or grated Parmesan
Instructions
Preheat oven to 425°F.
Toss potatoes with oil and seasonings.
Spread in a single layer on baking sheet.
Roast, flipping halfway, until golden and tender.
Garnish and serve.

Roast at high heat
Don’t overcrowd the pan
Reheat to restore crispness
