Best Roasted Red Potatoes

Crispy oven-roasted red potatoes seasoned with garlic and herbs.

Ingredients
  

  • 2 lb red potatoes scrubbed and cut into 1-inch pieces
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or thyme
  • Optional garnish: fresh parsley or grated Parmesan

Instructions
 

  • Preheat oven to 425°F.
  • Toss potatoes with oil and seasonings.
  • Spread in a single layer on baking sheet.
  • Roast, flipping halfway, until golden and tender.
  • Garnish and serve.

Notes

  • Cut potatoes evenly
  • Roast at high heat
  • Don’t overcrowd the pan
  • Reheat to restore crispness
