- 2 tbsp olive oil or butter
- 1 medium onion diced
- 2 carrots sliced
- 2 celery stalks sliced
- 3 cloves garlic minced
- 6 cups chicken broth
- 3 cups shredded rotisserie chicken skin removed
- 1 tsp dried thyme
- ½ tsp dried rosemary
- 1 bay leaf
- Salt and black pepper to taste
- Optional: 1 cup egg noodles or cooked rice
- Optional garnish: fresh parsley lemon wedges
- Add chicken near the end
- Don’t oversalt early
- Freeze without noodles
- Brighten with lemon before serving
