Best Sausage Tortellini Soup
Creamy one-pot soup with Italian sausage, cheese tortellini, and spinach.

- 1 lb Italian sausage mild or spicy, casings removed
- 1 tbsp olive oil if needed
- 1 medium onion diced
- 3 cloves garlic minced
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes optional
- 1 14.5 oz can diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- 10 –12 oz refrigerated cheese tortellini
- 2 cups fresh spinach or kale
- Salt and black pepper to taste
- Optional garnish: grated Parmesan fresh basil
Brown sausage and sauté onion and garlic.
Add tomatoes, broth, and seasonings; simmer.
Stir in cream and tortellini.
Add greens and season.
Serve hot.
- Don’t boil after adding cream
- Cook tortellini just until tender
- Add broth when reheating
- Garnish with Parmesan
