Ingredients
Potatoes:

baby potatoes

salt
Seasoning:
3
tbsp
olive oil
3
cloves
garlic
minced

tsp
black pepper

Optional Topping:
2
tbsp
grated Parmesan cheese
Fresh parsley
chopped
Instructions
Boil potatoes until tender.
Drain and smash onto baking sheet.
Season and drizzle with oil.
Roast until crispy and golden.
Add toppings and serve.
Notes
Do not overboil potatoes
Dry potatoes before roasting
Use enough oil for crispiness
Serve immediately
