Best Stuffed Pepper Casserole

A hearty casserole with ground meat, rice, bell peppers, and tomato sauce topped with melted cheese.

Ingredients
  

  • Base:
  • 1 lb ground beef or turkey
  • 1 cup uncooked rice
  • 2 cups water or broth
  • Vegetables:
  • 2 bell peppers chopped
  • 1 small onion chopped
  • 3 cloves garlic minced
  • Sauce:
  • 1 can 14 oz diced tomatoes
  • 1 cup tomato sauce
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • Topping:
  • 1 cup shredded cheese cheddar or mozzarella

Instructions
 

  • Cook meat and sauté vegetables.
  • Add rice, tomatoes, sauce, and seasoning.
  • Transfer to baking dish and bake covered.
  • Add cheese and bake until melted.
  • Rest briefly and serve.

Notes

Use enough liquid for the rice to cook
Cover while baking
Adjust seasoning to taste
Store properly
