Ingredients
  

  • 4 large poblano peppers
  • 1 tbsp olive oil
  • 1 cup cooked rice white or brown
  • ½ cup black beans rinsed and drained
  • ½ cup corn kernels fresh or frozen
  • ½ cup shredded cheese Monterey Jack, cheddar, or Mexican blend
  • ¼ cup diced onion
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • Salt and black pepper to taste
  • Optional toppings: sour cream cilantro, salsa

Instructions
 

  • Roast poblanos until blistered and tender.
  • Prepare filling and stuff peppers.
  • Top with cheese and bake until bubbly.
