Ingredients
  

  • 1 cup mashed sweet potato roasted or boiled, cooled
  • cups all-purpose flour
  • 2 tbsp sugar brown or white
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg optional
  • ½ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract

Instructions
 

  • Whisk dry ingredients.
  • Mix wet ingredients with sweet potato.
  • Combine gently and rest briefly.
  • Cook pancakes until golden and fluffy.

Notes

  • Cool the mashed sweet potato before using
  • Don’t overmix the batter
  • Medium heat works best
  • Freezes well for meal prep
