Best Tuscan Chicken Pasta

Creamy Tuscan-style pasta with chicken, sun-dried tomatoes, spinach, and Parmesan.

Ingredients
  

  • 12 oz pasta penne, fettuccine, or rigatoni
  • 1 lb boneless skinless chicken breasts or thighs sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • ½ tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste
  • ½ cup sun-dried tomatoes oil-packed, sliced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Optional: red pepper flakes fresh basil

Instructions
 

  • Cook pasta and reserve water.
  • Sear seasoned chicken and set aside.
  • Make garlic cream sauce with tomatoes.
  • Add cheese, spinach, chicken, and pasta.
  • Adjust seasoning and serve.

Notes

  • Don’t boil the cream
  • Use pasta water to loosen the sauce
  • Season at each step
  • Best served fresh
