Ingredients

penne
or rigatoni

tbsp
olive oil
2
tbsp
unsalted butter
1
small onion or shallot
finely diced
3
cloves
garlic
minced
½
tsp
red pepper flakes
optional
¼
cup
vodka
1
cup
crushed tomatoes or tomato purée
¾
cup
heavy cream
¾
cup
freshly grated Parmesan cheese
plus more for serving
Salt and black pepper to taste
Optional garnish: fresh basil or parsley
Instructions
Cook pasta and reserve water.
Sauté onion and garlic.
Deglaze with vodka; simmer.
Add tomatoes, then cream and cheese.
Toss with pasta and serve.
Notes
Simmer vodka briefly
Don’t boil after cream
Use pasta water to emulsify
Finish with extra Parmesan
