Ingredients
  

  • cups cake flour
  • cups granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter softened
  • 1 cup whole milk room temperature
  • 5 large egg whites room temperature
  • 2 tsp pure vanilla extract
  • Optional: ¼ tsp almond extract

Instructions
 

  • Prepare pans and preheat oven.
  • Mix dry ingredients and cream with butter.
  • Add milk, then egg whites and vanilla.
  • Bake until set and cool completely.
  • Frost and serve.

Notes

  • Use room-temperature ingredients
  • Don’t overmix
  • Cake flour gives the best texture
  • Cool fully before frosting
