- 2 cups long-grain rice
- 1 onion · 3 garlic · 2 tbsp oil
- 2½ cups broth
- Saffron OR 1 tsp turmeric + ½ tsp annatto
- Cumin · oregano · bay leaf
Sauté onion + garlic → toast rice.
Add spices + broth → boil → low simmer covered 15 min.
Rest covered 10 min off heat.
Fluff → serve with cilantro + lime.
